Some allergens cannot be checked here

This document covers only 28 of Japan's 29 listed items. The other 1 — including Pistachio — cannot be checked here.

If you avoid any of these, please check with the restaurant directly before visiting.

In addition, the published material cannot answer for Celery, Lupin, Mustard, Sulphur Dioxide and Sulphites — items that EU, International (Codex) require.

The listing is split into seven categories; the headings on the page read 単品ラーメン (ramen on its own), トッピング (toppings), 定食 (set meals), 単品 (other dishes on their own — the same 単品 as in the first heading), 飲茶 (dim sum), 飲み物 (drinks) and 調味料 (condiments). Each dish's allergen names are given beneath its name. Set meals come with the standard ramen, so the page asks you to check the entries for that ramen and any toppings you order as well as the set meal itself. Dishes served with cabbage also come with a dressing that contains wheat and eggs; the dressing itself is listed separately under 調味料 (condiments).

Notes for reading

This page lists, under each dish's name, the allergen names it contains in parentheses (it is not a conventional HTML table). At the top of the page the chain states that it aims to mark an allergen as contained not only where its presence is clear, but also where it is shared at the processing or cooking stage — so the allergen names beside a dish do not necessarily mean the allergen is used as an ingredient. A note at the bottom of the page states that the listing covers the 28 items the Consumer Affairs Agency requires or recommends be labeled, but there is no per-item column and nothing says that an unnamed item is unused. We therefore treat any item not named against a given dish as unknown rather than assuming it is absent. (Japan's official list grew to 29 items in April 2026 with the addition of pistachio, but this page's note still refers to the older 28-item count.) Twenty-three dishes also carry the generic word 魚介類 (seafood). The page never explains what that word covers, and it is not the page's way of naming any particular item: a reader looking for shrimp, crab, mackerel, salmon, squid, abalone, salmon roe or anything else cannot take 魚介類 to stand for it. The page is not consistent about it either: ten dishes list 魚介類 alongside shrimp, crab or mackerel by name, while two dishes name mackerel or shrimp with no 魚介類 at all. A line that says only 魚介類 therefore tells you nothing about whether shrimp, crab or any other named item is present. We do not read 魚介類 as any particular item. Where the page names an item outright — shrimp, crab or mackerel, for instance — we read it as named; where a line carries only 魚介類, we treat every item that word could cover as unknown.

Details

Allergy notes

The official site publishes the allergens contained in each dish, based on the 28 items the Consumer Affairs Agency requires or recommends be labeled. Rairaitei says it aims to mark an allergen as contained not only where its presence is clear, but also where it is shared at the processing or cooking stage. Ordinary cooking equipment and tableware are shared across dishes, so even the smallest traces of an allergen may get into a dish during cooking or plating. Dishes are also made on equipment shared with other products that contain eggs, milk, beef, sesame, mackerel, banana, apple, pork or gelatin. Some dishes carry the word 魚介類 (seafood), which names no particular item; the page does not say which items it covers. The chain says that sensitivity to allergens varies widely from person to person, and that depending on the severity of a person's symptoms and their condition on the day, even a trace amount can bring on a reaction; it asks that this information be treated as a guide only and that the final judgement be made in consultation with a specialist physician.
