A dot (●) in a cell indicates the item contains that allergen (no explicit legend text is printed, but the dot is the only mark used). Items whose name is printed in red show only the allergens of the raw meat itself (not the seasoning), and the allergens of the seasoning sauces must be checked separately in the "seasoning sauces" section at the bottom of the table. Two of the column headers could not be read with confidence at the image resolution available (the other 26 were read as shrimp, crab, walnut, wheat, buckwheat, egg, milk, peanut, abalone, squid, mackerel, salmon roe, sesame, matsutake mushroom, peach, yam, apple, gelatin, orange, almond, banana, pistachio, soy, beef, pork and chicken). This site leaves the confirmed allergen list incomplete until those two columns are verified.

The official site publishes an allergen list for each menu item. Because shared kitchen equipment is used, other allergens may be present through cross-contact. Items whose name is printed in red show only the allergens of the raw meat itself; the allergens of the seasoning sauces are shown in a separate list.
