This chart was compiled by tracing ingredients back to their raw materials, but does not guarantee against cross-contact during factory processing or in-store cooking. Udon and Chinese-style noodles are boiled using the same equipment, so their ingredients can mix. Tempura scraps (tenkasu) are said to contain the allergens used across tempura items in general, since they share the same frying oil (such as egg, shrimp and fish). Some menu items are not listed on this chart because their ingredients vary day to day.
