Notes for reading

The document opens with its own instructions. What it prints is the same as the ingredient label attached to each product, and the allergen information sits in two different places. One is the 'allergy' block of columns on the right, where only milk, egg, wheat, buckwheat, peanut, shrimp and crab have a column, marked ● when present. The other is the ingredients-and-additives text in the middle of the row, where everything else appears by name, usually in the closing 'contains some ...' phrase. Sesame, soy, beef, pork, chicken, salmon, mackerel and apple have no column, so reading only the ● marks will miss them. The cover says 'the other 21 items are given in the labelling text' but never lists which 21, and walnut in fact appears nowhere in the document at all — no column, and not one mention in any row (the same is true of almond and cashew). If you are avoiding walnut, following the cover's instruction gives you nothing to read, so treat this list as unable to answer for it. Next, rows for products made with chirimen (dried young sardines) carry a note that the chirimen is caught by a method in which shrimp and crab are mixed in — dozens of them — and rows made with chikuwa (fish cake) carry a similar note. The shrimp and crab columns on those rows are almost all blank, so if you are avoiding shrimp or crab, look for the note rather than the columns. No row anywhere in the document has a ● in the buckwheat or peanut column. That is not the chain stating it uses neither; it is only what the emptiness looks like. Blanks need particular care. In a row with an ingredient text, a blank is supposed to mean the item is not named on that product's label — but there are rows whose text names shrimp, crab or egg while the column is blank, and a raw-egg product whose egg column is blank. On top of that, the daily-changing bento, the SAKANA / special / deluxe bento, the assorted side-dish sets, the pickles, and bought-in goods such as drinks, rice and eggs carry neither text nor ●: the whole row is blank, because the contents change from day to day, which the document says itself while telling customers to check the contents of a bento at the store. This site does not read a blank in this document as 'does not contain'. The document also says nothing about cross-contact from shared cooking areas or equipment.

Legibility notes

The text can be selected and copied; it is not an image. But each row's ingredient statement is long and the wide table is set in small type, so on a phone you will need to zoom in, and it can be hard to keep track of which ● belongs to which row. The ※ notes sit at the very end of the ingredient text, where they are easy to miss.

How to read the symbols

The original document uses the symbols below. Our table shows the original symbol next to items with possible cross-contact.

How to read the symbols
How it appearsMeaning
A ● in the 'allergy' columns on the right means the product contains that column's item — milk, egg, wheat, buckwheat, peanut, shrimp or crab. Those seven are the only items with a column of their own.
Show the original
Items other than those seven have no column: they appear by name inside the ingredients-and-additives text in the middle of the row, usually in the closing 'contains some ...' phrase. If the name is there, the product contains it. The cover says 'the other 21 items' but never lists them, and walnut, almond and cashew do not appear anywhere in the document, so searching the text for them yields nothing to read.
Rows for products made with chirimen (dried young sardines) carry a note at the end of the ingredient text saying the chirimen is caught by a method in which shrimp and crab are mixed in; rows made with chikuwa (fish cake) carry a similar note about the fish it is made from. Dozens of products carry one. It states a possible presence of shrimp and crab — yet the shrimp and crab columns on those same rows are almost always left blank. If you are avoiding shrimp or crab, look for this note rather than the columns.
The document never defines what a blank means. Having read it through, this site treats a blank here as carrying no 'does not contain' statement. A blank has at least three causes and they look identical. It can mean the row has an ingredient text that does not name that item. It can mean the whole row is blank — the daily-changing bento, the assorted sets, bought-in goods such as drinks and rice — because the contents change from day to day, which is the one case the document itself explains. And it can simply mean the mark was not entered: there are rows whose own ingredient text names shrimp, crab or egg while the column is blank, and a raw-egg product whose egg column is blank. For shrimp and crab, the columns stay blank even on the rows carrying the note about possible presence. A blank also says nothing about cross-contact from shared cooking areas or equipment.

This document does not state, per symbol, the scope of possible cross-contact (a shared fryer, a shared line, and so on).

Details

Allergy notes

The chain publishes a single list covering the products it sells, one row per product, giving each product's ingredients, additives and allergen information. What it prints is the same as the ingredient label attached to the product itself. Only seven items have a column of their own — milk, egg, wheat, buckwheat, peanut, shrimp and crab — marked ● when present. Every other item has no column and instead appears by name inside the ingredients-and-additives text, usually in the closing 'contains some ...' phrase. Sesame, soy, beef, pork, chicken, salmon, mackerel and apple are on that side, so reading only the ● marks will miss them. Walnut is worse than uncovered: the word does not appear anywhere in the document, in any row, so there is nothing to read and this list cannot answer for it. Dozens of rows made with dried young sardines or fish cake carry a note that shrimp and crab are caught alongside the fish they are made from — and the shrimp and crab columns on those rows are left blank. A blank does not mean 'does not contain'. There are rows whose own ingredient text names shrimp, crab or egg while the matching column is blank, one raw-egg product whose egg column is blank, and whole rows — the daily-changing bento, the assorted sets, bought-in goods such as drinks and rice — that are blank from end to end. Treat a ● as a signal that something is present, but never treat the absence of one as 'not used': read the ingredient text, and ask at the store when you need to be sure. Seasonal products that are not always on sale are included in the list as well.
