A 40-page PDF, but 18 of those pages repeat a chart that already appeared earlier, so 22 pages carry distinct content. Charts of one or two pages each follow one group of menu items at a time -- lunch, the grand menu, banquet courses, small dishes, seasonal fairs -- and replacement charts carrying only the products whose contents changed are included as well. The most recent are the two charts on the last two pages, both dated 14 August 2026 (the anniversary course and the ladies' gathering course).

Know this first: products the customer selects (sauces, dressings and the like) and condiments applied to taste (soy sauce, Tabasco and so on) are not covered by this chart. You may take in an allergen from those even where the chart shows no mark. Each row is a product and each column an allergen item; the document's own key explains that a filled circle means the item is contained and a dash means it is not. There are 28 columns -- the items this document covers, drawn from the legally required and the recommended allergens, though not all of the items the law lists. The column order is what needs the most care. The same file uses two different orders, and the only column they agree on is the first one, shrimp -- the other 27 are all displaced. In one order cashew nut is the 2nd column and almond the 10th; in the other, cashew nut is the 27th and almond the 28th. The older of the two orders is the more common, and the largest charts -- the grand menu and the Yokohama Sky Building store chart -- still use it. You cannot tell them apart by date: charts with recent dates use the older order too. Always check the column names in the header of the chart you have open. Applying another chart's header to it will misread every item except shrimp. For pistachio, the charts in the newer order say it is still being checked; there is no column for it.
