The chart follows the menu's own categories (12 of them: okonomiyaki, Hiroshima-style, yakisoba, monjayaki, fuwari-yaki, toppings, "small plates and single dishes", salads, teppanyaki, rice dishes, desserts, limited-time items), with calories and allergens on each row. It has 27 columns. Of the 29 items Japan currently covers, three have no column here: almond, macadamia nut and pistachio. It does have a column for matsutake mushroom, which is not one of the current 29 but belongs to an earlier version of the list. Cashew nut does have a column. Page 1 states that the chain does not publish allergen information for soft drinks and alcohol, and there are no rows for them; it also says drinks are poured through shared dispensers.
