Each row is one product and there are eight columns: egg, milk and dairy, wheat, buckwheat, peanut, shrimp, crab and walnut. A dot marks the columns that apply and the rest are left blank. Because the dot is used both for an allergen used as an ingredient and for one whose production line is shared at the factory, the table cannot tell the two apart. The official site of Tendon Tempura Honpo Santen publishes a per-menu allergen list. The list has columns for eight items: egg, milk, wheat, buckwheat, peanut, shrimp, crab and walnut. The official page says yam is also covered, but the list itself has no yam column. There is no cashew nut column either - cashew became a mandatory item in April 2026 - so this list cannot answer for it. A dot in the table means the item is used as an ingredient OR that the product shares a production line at the factory. The site also warns that utensils, tableware, storage containers and frying oil are shared in the restaurant, so allergens not shown in the list can still get into a dish during cooking. Noodles are boiled in a shared pot. The condiments on the table (soy sauce, shichimi pepper, furikake, salt and so on) are outside the scope of the list.
