Notes for reading

Under each dish name, the allergen names it contains are written out in plain text, not as symbols or icons. Many dishes also carry a "remarks" note listing allergens found in accompanying parts such as a sauce or topping. There is no statement or legend anywhere on the page describing which allergens were checked overall, so when an allergen's name is not listed for a dish, that is not a declared statement that the dish is free of it — it simply is not mentioned. The allergen names that actually appear on the page are these 18: egg, milk, wheat, shrimp, crab, walnut, cashew nut, peanut, squid, fish roe, soy, sesame, apple, almond, beef, chicken, pork, and salmon. Buckwheat, abalone, orange, kiwi fruit, mackerel, banana, macadamia nut, peach, Japanese yam, gelatin, and pistachio never appear (beef, chicken, pork, and salmon are not among Japan's 9 mandatory-labeling items, but they are among the 20 recommended items). Also, the page's term "fish roe" (魚卵) is a general term for fish eggs and is written differently from "salmon roe" (いくら), the specific named item.

Details

Allergy notes

Chianti (Il Chianti), an Italian-style dining chain, maintains an "Allergen Labeling" page on its official site where, for every dish across its Signature Dishes, Appetizers, Salads, Dressings, Soups, Desserts (Dolce), Pasta, Pizza, and Risotto/Rice & Meat-Fish Dishes categories, you can check the names of the allergens each dish contains. The 18 allergens that appear on the page are: egg, milk, wheat, shrimp, crab, walnut, cashew nut, peanut, squid, fish roe, soy, sesame, apple, almond, beef, chicken, pork, and salmon (beef, chicken, pork, and salmon are not among Japan's 9 mandatory-labeling items, but are among the 20 recommended items). Buckwheat, abalone, orange, kiwi fruit, mackerel, banana, macadamia nut, peach, Japanese yam, gelatin, and pistachio never appear on the page, so customers with those allergies cannot confirm from this page alone whether a dish contains them. All fried items use oil that has also been used to fry crab, so fried dishes may contain crab. Spaghetti, pizza, gratin, and lasagna all use wheat in their dough, and pizza dough also uses dairy. Desserts (Dolce) are prepared with shared cooking equipment, so trace amounts of egg, dairy, and wheat may be present. In addition, the factory that makes the pizza dough also makes products containing walnut, egg, and dairy, so trace contamination with these is possible. Because the ingredients used may change depending on supply, customers with food allergies are asked to always check with staff when visiting.
