A two-page list that names, to the right of each dish, the allergens that dish contains. It is not a chart with a column per item, so about an allergen whose name does not appear the document says nothing at all -- it cannot be read as "not used". A line at the top of this list says that it shows Japan's 8 mandatory and 20 recommended items. Only 11 allergens are actually named anywhere in the body, though, and there is no column per item, so we do not read that line as meaning the document answers for all 28 items dish by dish. It opens with a picture key showing Japan's 8 mandatory and 20 recommended items, which states that a red solid border means the item is used as a raw material and that a blue dotted border means it is handled in the same facility. In that key, four items -- peach, matsutake mushroom, Japanese yam and gelatine -- carry the blue dotted border, and all of the remaining 24 carry the red solid one; no item is left unbordered. Buckwheat, peanut, walnut, crab, mackerel, chum salmon, salted salmon roe, abalone, kiwi fruit, orange and pork all carry the red solid border in this key. And when we counted the allergens actually named in the body of this two-page list, there were 11: wheat, egg, milk, shrimp, soybean, chicken, beef, almond, cashew nut, sesame and banana. The dish names and allergen names are written as text rather than drawn as pictures. The Japanese, however, is stored without the information a device needs in order to tell which character each shape is, so the Japanese cannot be searched as text or read aloud by a screen reader. Some PDF viewers do not show the Japanese at all, which can make the Japanese edition look like a mostly blank page. In the English edition the same thing affects the brackets in some dish names and the "+" that tells you to add the curry, which can be missing. The item key at the top and the explanation of the borders are drawn as pictures, so those cannot be searched or read aloud either.

The only characters this file sets in a Japanese typeface are the brackets in some dish names, the "+" that tells you to add the curry, the "&" in a couple of product names, and the page number at the foot of each page; there is no Japanese wording in it at all. Those characters are stored without the information a device needs in order to tell which character each shape is, so some PDF viewers drop them and the brackets, the "+" and the "&" can go missing. The item key at the top and the explanation of the borders are drawn as pictures, so those cannot be searched as text or read aloud by a screen reader.
