Differences between stores

The published material says nothing about differences between stores. Saying nothing is not saying there are none.

The document says nothing about anything differing from store to store — not the menu, not how items are cooked, not what goes into them. It does, however, direct customers to check anything the chart does not carry with their assigned delivery store.(machine translation)

Notes for reading

Every cell carries either that item’s own name or the mark 「-」, and none is left empty. For the cells that carry a name, the chain states that it is showing the allergens contained in that menu item. What 「-」 means is not written in the document, so this site reads the mark from the way the table is built. Items are split into one table per heading, and within each table they are roughly in Japanese kana order, with an index character (あ, か, さ …) at the left edge of the row. Within one index group the order is not strictly kana order, though, and names beginning in Latin letters are filed under their Japanese reading, so scan the whole group for the item you want. For items under 「タパス&デザート」 (tapas & dessert), the ingredients of the accompanying ‘fancy sauce’ (tomato/mustard) are not included in that item’s cells. The same document’s 「★ソース/ドレッシング」 (sauces / dressings) table has rows for 「トマト・ファンシーソース」 and 「マスタードソース」. The document does not say that these are that fancy sauce, but this site reads these rows as corresponding to it, so check them as well. Salad dressing ingredients are likewise not included in the salad’s cells — but for dressings that table cannot close the gap: it carries only two, 「イタリアントマトドレッシング」 and 「和風ドレッシング」, and nowhere does the document say which dressing comes with which salad. Treat the dressing served with a salad as something this document cannot tell you about. For tapas items served with tartar sauce, however, the tartar sauce’s ingredients are included in that item’s cells. For anything the chart does not carry, the chain directs customers to contact their assigned delivery store directly.

Legibility notes

The text is printed in a selectable, copyable form, but a great many items are packed across a single landscape sheet, so the type in the table is very small and cannot be read in practice without magnifying it. On a phone, turn the screen sideways and then zoom in. On page 1 (Paella, Tapas & Dessert) the rows alternate between white and pale green and the heading bands are green; on page 2 (Sauces & Dressings, Drinks & Alcohol) the rows alternate between white and pale yellow and the heading bands are gold. Three of the column headings — 「キウイフルーツ」 (kiwi fruit), 「カシューナッツ」 (cashew nut) and 「アーモンド」 (almond) — are the only ones printed across two stacked lines, so when checking which column is which item, read the upper and lower halves of the heading together. Note also that, of the notes at the top, two are printed in red (the one about the fancy sauce and the one about salad dressings) and the note about contacting the delivery store is underlined. The underline is a black rule, so it survives a black-and-white printout.

− (our reading)This chart has a dedicated column for each item, and every single cell holds either that item’s own name or this mark (-); not one is left empty. For the side that carries a name, a note at the top of the document states that, for each menu item, the chart is showing the allergens that item contains. For this mark, by contrast, there is nowhere in the document any wording that explains what it means. Because each item has its own column and only two things are ever used in the cells — the names and this mark — this site reads the mark as meaning that the item is not used as an ingredient. The document itself does not say so, and the mark is not a guarantee against cross-contamination. The chain separately states that, besides being present as an ingredient, an allergen may be mixed in during production at the factory or during cooking at the store.

No scope of possible cross-contact (a shared fryer, a shared line, and so on) is recorded for this document's marks. The scope may be given in the document's notes or under “Notes for reading”.

Details

Allergy notes

The Viva Paella document is a single PDF allergen chart covering four menu categories: Paella, Tapas & Dessert, Sauces & Dressings, and Drinks & Alcohol. The chart has a dedicated column for each of 27 items, and every cell carries either that item’s own name or the mark 「-」; not one cell is left empty. For the cells that carry a name, the chain states that it is showing the allergens contained in that menu item. What 「-」 means is written nowhere in the document. The document also does not state how many items it checked. There is no column for macadamia nut and none for pistachio. The ingredients of the accompanying ‘fancy sauce’ (tomato/mustard) served with Tapas & Dessert items, and salad dressings, are not included in the main dish’s listed values (tapas items served with tartar sauce do include the tartar sauce’s ingredients). Because the document never says which dressing comes with which salad, a salad’s dressing cannot be checked from this document. The chain also states that, besides being present as an ingredient, an allergen may be mixed in during production at the factory or during cooking at the store.
