What is stated about severe allergies
The chain states that this data does not guarantee that no allergic reaction will occur, and that the final decision rests with the customer, in consultation with their attending physician. It cautions people with severe or sensitive allergies that soba and udon are boiled in the same kettle so udon may pick up buckwheat, that soy-based sauces and dipping broths (containing wheat flour, soybean and mackerel extract) are used on the kitchen line, that dishes carrying the relevant footnote are cooked in the same place as soba and so contain buckwheat components, and that even on the low-allergen menu wheat flour and the like used for frying tempura in the same kitchen may transfer.(machine translation)

A contents page listing the categories is on page 2, so you can find which page holds the table you need before scrolling. In each table the dish name is at the left, followed by the nutrition columns and then the 27 allergen columns. Because the update date differs page by page, check the date in the corner of the table you are reading rather than a date for the document as a whole. In particular, 'soba / udon' (page 4) — the page you are sent to about swapping noodles — is the oldest of the 27, updated on October 6, 2023.

- Notes for reading
The table covers 27 items. All 9 items whose disclosure is legally mandatory in Japan (egg, milk, wheat, buckwheat, peanut, shrimp, crab, walnut, cashew nut) have a column, as do 18 of the recommended items (abalone, squid, salmon roe, orange, kiwi fruit, beef, sesame, salmon, mackerel, soybean, chicken, pork, matsutake mushroom, peach, yam, apple, gelatin, banana). There is no column for almond, macadamia nut or pistachio, so this table cannot answer for those. The following optional extras are excluded from the allergen markings: milk portions, stick sugar, gum syrup, soy sauce, dressing, tempura bits, shichimi pepper, takeout soy sauce and takeout miso soup. They appear on 'optional dipping sauces and condiments' (page 3). In other words each row's marks describe the dish without whatever you add yourself. Tempura dipping sauce, matcha salt, soba/udon dipping sauce, sauce, ponzu, tartar sauce and takeout sauce are listed in item 9 on the cover as items excluded from the nutrition figures (their rows are on page 3). Some contamination warnings carry a mark and some are prose only. Five are prose only: three on the cover and two on the low-allergen menu page (page 6). (1) The data is theoretical, drawn from an ingredient survey, so allergens may adhere or get mixed in during factory production or during cooking at the store — the document does not separate the two. (2) Soba and udon are boiled in the same kettle, so udon may pick up buckwheat. (3) Soy-based sauces and dipping broths, which contain wheat flour, soybean and mackerel extract, are used on the kitchen line. (2) is written as a caution for people with severe allergies or who are sensitive, and (3) for people with severe allergies or who are hypersensitive. (4) On the low-allergen menu page (page 6): dedicated utensils are used and the dishware is washed for that menu only, but wheat flour and the like used when frying tempura in the kitchen may transfer secondarily, and this is not a guarantee that no reaction will occur. (5) The same page also has a note that soy-based sauces and dipping broths, which contain wheat flour, soybean and mackerel extract, are used on all kitchen lines, so people with severe allergies or who are hypersensitive should take care (the cover's (3) says only 'the kitchen line'). The two warnings that do carry a mark are the triangle, for contamination at the maker, and the footnote number 1, for being cooked in the same place as soba. Footnote 1 is explained below the tables on several pages, but in this edition no row was found carrying footnote 1 in the document's text. Dish names and the space below the tables carry marks (the star, the diamond, footnotes 2 to 4 and others) that show, among other things, that something is left out of a row's figures, along with their explanations. Check what a mark means in the explanation near that table. The same mark is used with different meanings in places (for example, on page 5 the star is used both for 'the selectable children's drink that comes with the set is not included' and for 'nutrition per 60g piece'). Because the markings follow the menu photographs, the document tells you to see 'soba / udon' (page 4) if you order the noodles swapped.

- Legibility notes
The tables have many columns laid out wide, with nutrition-fact columns alongside the allergen columns. The 27 allergen headings are set vertically in narrow columns, so viewing on screen may require zooming or horizontal scrolling, and when following a row across to a column, take care not to miscount the columns. The reading notes are on the cover and the explanations of the star, the diamond and footnotes 1 to 4 are placed below the tables on some pages, so the explanation is not necessarily on the same page as a row carrying the mark. The text itself is clear and was straightforward to read.

How to read the symbols
The original document uses the symbols below. Our table shows the original symbol next to items with possible cross-contact.
| How it appears | Meaning | Cross-contact scope |
|---|---|---|
| ● | A mark placed, based on menu photographs, on items that use this allergen as an ingredient. | The scope of possible cross-contact is not specified |
| ▲ | Indicates that although the ingredient is not used as a raw material, information from the maker says trace amounts may unintentionally get in while the food is being manufactured. This mark covers contamination at the maker; contamination in the restaurant's own kitchen is described in prose instead of by a mark. | Handled on the same factory line |
| ※1 | A note about that row: the dish is cooked in the same place as soba, so buckwheat components are present in it. The document adds that people with severe or sensitive allergies should take care. | Blank (our reading) | The table says nothing about what an unmarked cell means. Because the table has a column for each of the 27 items and we checked every page and found only two marks in the cells — a filled circle and a triangle — this site reads an unmarked cell as meaning the item is not used as an ingredient. That reading is ours, not something the table states. It is also not a guarantee against contamination: the cover states that the data is theoretical, drawn from an ingredient survey, that soba and udon are boiled in the same kettle, and that soy-based sauces and dipping broths are used on the kitchen line. And because the condiments and dipping sauces you add yourself are outside the markings, an unmarked cell means 'not used, leaving aside what you add yourself'.Show the original印の無い欄について、この表は何も述べていません。 | The scope of possible cross-contact is not specified |
Details
Allergy notes
Tonden publishes a 'Nutrition & Allergen Ingredient List' (a 27-page PDF) whose markings are based on menu photographs and cover 27 items. All 9 items whose disclosure is legally mandatory in Japan (egg, milk, wheat, buckwheat, peanut, shrimp, crab, walnut, cashew nut) have a column, as do 18 of the recommended items (abalone, squid, salmon roe, orange, kiwi fruit, beef, sesame, salmon, mackerel, soybean, chicken, pork, matsutake mushroom, peach, yam, apple, gelatin, banana). There is no column for almond, macadamia nut or pistachio. A filled circle marks an item used as an ingredient, and a triangle marks contamination at the maker, based on information from the maker (contamination meaning a very small amount of an allergen getting in unintentionally during manufacture even though it is not used as an ingredient). Not every contamination warning has a mark: the cover states in prose that because the data is theoretical, drawn from an ingredient survey, allergens may adhere or get mixed in during factory production or in-store cooking, that soba and udon are boiled in the same kettle, and that soy-based sauces and dipping broths are used on the kitchen line. Milk, soy sauce, dressing, tempura bits and other extras you add as you like are not included in the allergen markings and appear on page 3. Notes on the tables also say that the soft drink that comes with a set meal, the selectable dressing and the selectable children's drink are not included in that row's markings; some of these notes point to other pages to refer to.

Leaving ingredients out on request
The document says that if you order soba or udon swapped, you should refer to the 'soba / udon' page (page 4). That page says the soba and udon in set meals come as cold soba, hot soba, cold udon or hot udon. Note that this is the oldest page in the 27-page document, updated on October 6, 2023.

What is actually possible differs by store and by situation.
Allergy-friendly menu
The low-allergen menu page lists four dishes: low-allergen curry, low-allergen chewy rice-flour bread, low-allergen children's lunch and low-allergen rice-flour pizza (the ingredient details on the same page also list a low-allergen jelly, a mandarin orange jelly); the children's lunch and the pizza are offered only at some stores. The document says the low-allergen curry does not contain the 8 specified ingredients (egg, milk, wheat, buckwheat, peanut, shrimp, crab, walnut), and adds a caution that, among the drinks, Calpis Water contains milk and the orange drink contains orange. It states that the low-allergen menu is cooked with dedicated utensils and served on dishware washed for that menu only, but that because wheat flour and the like are used when frying tempura in the kitchen, allergenic ingredients may transfer secondarily, and that this is not a guarantee that no allergic reaction will occur. The same page also has a note that soy-based sauces and dipping broths (containing wheat flour, soybean and mackerel extract) are used on all kitchen lines, so people with severe allergies or who are hypersensitive should take care.
